  1. A. Blanch the meat by placing it in a pot, pour enough water to cover the meat then bring to a boil. As soon as the water comes to a boil, discard the the liquid and rinse meat under running cold water. Keep aside.
  2. Place cinnamon sticks, star anise, bay leaves, cardamoms and cooking oil in a deep pan. Over a medium heat, let the spices to infuse then lower the heat and small bubbles (simmer-like) around the spices. Turn the heat to medium again and remove ONLY the spices.
